Description

100% responsible for the operations of Pinnacle Food Company, including but not limited to:

MANAGEMENT

  • Scheduling and ensuring the kitchen is open and properly staffed during the agreed upon hours of operation
  • Compliance to all health and safety regulations
  • Procurement of supplies, including food and ingredients
  • Control of food cost and usage
  • Prepare all required and necessary paperwork, including forms and reporting in a timely manner
  • Recruit, hire, manage, and if necessary, discipline line cook employees
  • Establish and manage commissary kitchen

KITCHEN

  • Keeping all work areas, equipment, food storage, floors, walls, hoods, etc. sanitary by developing and monitoring practices that meet and exceed industry standards and regulations
  • Maintaining proper food handling including but not limited to cooking temperatures, food holding, and refrigeration
  • Creating a menu and recipes that are agreed upon by ownership, and delivering food that meets agreed upon standards for portioning, cooking, and serving
  • Inspecting and maintaining equipment and working areas to ensure a clean, fully-functioning kitchen
  • Planning and supervising food preparation and cooking activities
  • Continuously train employees on equipment, utensils, sanitation practices, first-aid, CPR, safety, and proper disposal of waste.
  • Focus on ticket time, and maintaining a high level of customer satisfaction

QUALIFICATIONS

  • 2+ years of kitchen management experience
  • Knowledge of the special needs of a mobile food kitchen
  • Exceptional cooking skills, with the ability to create and execute recipes
  • Constantly demonstrate impeccable customer service
  • Effectively motivate and manage the kitchen staff
  • Knowledge and practice of health and safety standards
  • Ability to multitask and work quickly under pressure
  • Attention to detail
  • Ability to handle administrative and accounting responsibilities

PHYSICAL REQUIREMENTS

  • Ability to work in hot and cold environments
  • Ability to stand for extended period of time
  • Able to work shifts that may exceed 10 hours
  • ServSafe Manager Certification
