A note from the Executive Chef November 2018

Greetings Everyone,

Somehow, someway, we have managed to work our way to the time of year where focus shifts to the holiday season and wrapping-up the year.  By this time I assume that all of you working out in the industry are gearing up for season…hiring a few more people, moving people around the kitchen, figuring out menus, and getting ready for the busy season.  It’s an exciting time in The Valley to be in the hospitality industry!  Dig in, buckle up, and you’re all going to do great things.

Our Annual October ACI Family Day was a big success…..except maybe for the rain.  Lots and lots of rain.  Sooooooo much rain.  But, despite the weather, people still came out to run, to walk, to visit, and to support the school.  I love that event, and I think it gets better every year.  Thank-you to everyone that stopped by, and please make sure to join us next year.  And we’ll try to work on the whole “weather” issue.

Our next Open House is still kinda far away, but it’s on Saturday, December 15th.  I (Chef Wolf) will be teaching another Molecular Gastronomy class, so keep an eye out for that!  And, Chef Newton will be teaching our Veteran Culinary and Baking Bootcamp class, and the topic will be on holiday baking.  Of course, there will be food, tours, beverages, smiling faces, all your favorite instructors, etc etc, so try to stop in and say “hello”.

We have a new group of students starting on Monday, November 12th, a graduation ceremony to plan for Friday, December 7th, and winter break looming on the horizon.  So, until next time, take-care my friends.  Keep up the hard work, and keep making us proud!
