Food & Beverage Management & Career Development Course Overview:
This course focuses on the management of food and beverage operations from both a business and leadership perspective. Students learn the fundamentals of kitchen management including staffing, employee training, and the flow of food from purchasing to service. The curriculum also emphasizes menu development, culinary math, cost control, and ServSafe Manager and ServSafe Allergen certifications.
In addition, students explore the history, production, tasting, and pairing of non-alcoholic beverages, beer, spirits, and wine. The career development component helps students create professional resumes, develop interview skills, and set long-term goals for success in the hospitality industry. The class is lecture and presentation-based with practical study through tastings and applied assignments.
