Food & Beverage Management & Career Development Course Overview:
This course focuses on the management of food and beverage operations from both a business and leadership perspective. Students learn the fundamentals of kitchen management including staffing, employee training, and the flow of food from purchasing to service. The curriculum also emphasizes menu development, culinary math, cost control, and ServSafe Manager and ServSafe Allergen certifications.

In addition, students explore the history, production, tasting, and pairing of non-alcoholic beverages, beer, spirits, and wine. The career development component helps students create professional resumes, develop interview skills, and set long-term goals for success in the hospitality industry. The class is lecture and presentation-based with practical study through tastings and applied assignments.

Ideal Candidate:
The ideal instructor is an engaging, organized, and enthusiastic hospitality professional who enjoys teaching the business side of food and beverage operations. You should be comfortable using technology and able to bring real-world experience to the classroom.

Qualifications:

• Minimum 3 years of professional experience in the food and beverage or hospitality industry
• Strong computer skills: proficient in Microsoft Word, Excel, and PowerPoint
• Demonstrated knowledge of culinary math, recipe costing, and cost-control principles
• Familiarity with product receiving, storage, and food safety best practices
• Excellent editing, writing, and presentation skills
• ServSafe Manager certification (or ability to obtain before teaching)
• Teaching experience preferred, but not required
• Ability to engage, mentor, and motivate students in a fast-paced learning environment

Responsibilities:

• Deliver engaging lectures and presentations aligned with course objectives
• Manage the receipt and storage of food, paper and chemicals for the school.
• Guide students through hands-on activities, tastings, and practical assignments
• Prepare and grade assignments, tests, and projects in a timely manner
• Maintain accurate records of attendance and student progress
• Support students’ career readiness through coaching in goal setting, resume writing, and interviewing
• Uphold ACI’s standards for professionalism, integrity, and academic excellence
