A note from ACI’s Executive Chef September 2015

Hello everyone!

Let’s get right to it: the October 10th open house is 1.5 weeks away!!! We’ll have the Chef Humphrey memorial 5k fun run/walk, a charity bake sale to benefit the “No Kid Hungry” foundation, tours of the school, snacks, a food truck, and a job fair, all on our campus, at the same time…what an amazing day it’s going to be. I am very excited, we’re very excited, and I hope you’re very excited and planning on joining us. Please don’t hesitate to contact the school, or me personally, if you have any questions about any of the things happening that day. We want to get you informed and get you HERE to see us and spend a wonderful morning together.

The following weekend, the staff is headed up to Page Springs Cellars to cook on the winery for a charity dinner that was auctioned off this year at the Tilted Earth festival. We cook the food, Page Springs Cellars provides the wine, and we’ll come together to create an amazing one-of-a-kind experience for the person who bid the highest in the silent auction. We love the folks up at PSC, and we love helping those in need, so this should be a pretty memorable event.
We had an Advisory Board Meeting on campus this month. There were about 15 influential chefs from around the Valley, representing hotels, restaurants, corporations, privately owned establishments, products sales, and the ACF, offering their opinions of what we’re doing and how we could do it better. It’s the best way to grow our school, grow our program, and make sure we are offering YOU the best experience possible. The biggest thing I took way from the meeting though, was that there are a lot of employers out there that like what we do, like our students, and really want to see us continue to be successful. It feels good to have the support of the local industry leaders!

We have a nice influx of students who just started in Basics. The campus should be a flurry of activity.
If you’re into food and wine, and I assume as an ACI family member that you ARE, we just hosted a great wine tasting in Du Jour featuring wines of Spain and Portugal. We have another one coming up October 14, 2015 featuring wines of Argentina and Chile. Then, we’re doing a beer dinner November 10, 2015 featuring ACI alumni, Justin Olsen, who has gone on to do some amazing things since leaving the school, and now he’s triumphantly returning to be a guest chef in Du Jour to guide through a dinner of food and beer pairings. There are still openings available for both events, so give us a holler for details!
Whew! And that’s not even EVERYTHING. Please don’t be a stranger, please keep in contact with us, and please help us keep the ACI family alive and well. We’re all in this together. We’re always trying to create experiences that separate us from the rest, and continue to provide you with knowledge to set you apart from your competition. We need each other, so keep getting involved. See ya next month!
